Learning what it takes to make healthful and delicious breads the way our ancestors did; celebrating the ancient harvest; and discovering the secrets of beers and grain based spirits.
Over the course of three days we’ll repeat our ancestors’ journey from flatbreads to risen sourdoughs, exploring in depth the grains, techniques and intuitions that the modern, industrial world is in danger of forgetting. We’ll explore the diversity and many benefits of ancient grains; how to work with water and fire, different flours and wild yeasts. We’ll glimpse a global heritage that ranges from the simple breads we dip and fill to loaves that crown a table; from ‘daily' breads to the sacred and ceremonial. We’ll celebrate and understand the vital connection between harvest and culture.
